Does blogging work? Just did.
We recently read a blog entry for Apple Sharlotka (Shar-whatka?) on this blog. It looked so good and easy, that we had to give it a whirl.
This recipe is also eerily similar to an apple pancake recipe from Penzey’s that we are quite fond of. The difference is that this is more like a cake and is made in a springform pan. You could still eat it with syrup though if you wanted to!
A Sharlotka is a Russian apple cake. it is remarkably simple, takes almost no time to put together, and looks pretty impressive. You start by dicing up 6 apples. This is probably the most complicated part of the recipe.
The batter is pretty simple: eggs, sugar, vanilla, and flour.
Pour on top of the apples, and then it goes in the oven. As it cooks, the batter works its way in between the apples so that by the time you’re done… you have a complete, cohesive cake.
I was worried that it wasn’t going to hold together when we took it out of the pan, but it held up just fine! We topped it with cinnamon and powdered sugar.
Serve with whipped cream (very American), sour cream (very Russian), or vanilla ice cream (very delicious)!
