Dear Readers,
We have recently become parents. Therefore, blogging has taken a backseat in our lives. HOWEVER, just because we aren’t blogging, doesn’t mean we aren’t COOKING. New parents need sustenance too! Tonight, we made “grown-up grilled cheese” and chickpea soup. It wasn’t much to look at color-wise, but there was a lot of flavor in this simple meal!
The chickpea soup was inspired by a soup we ate in Rome (natch). We have tried to replicate this soup before, with poor results, so we were skeptical that this recipe would work. However, this version was so simple and delicious, I have a feeling we’ll be making it over and over again!
The grilled cheese came from an episode of America’s Test Kitchen (we’re suckers for this show). They claim that their recipe will only take 5 extra minutes from a traditional grilled cheese, but that is clearly not the case. It’s considerably more complicated than your everyday grilled cheese, but it was so good, it’s hard to complain. This recipe uses cheddar, brie, and shallot in the filling. How grown up!
And yes, that’s a baby monitor in the background. Baby wishes he was old enough to try this!
